Carrot Ginger Soup Recipe


One of my favorite healthy meals is this nourishing carrot ginger soup, hands down.

Packed with nutrients AND super delicious?! Yes, please!


– 1 onion
– 1 inch cube of ginger, finely diced
– 1 bunch of carrots
– 1 bulb of fennel
– 1 zucchini
– 2 stalks of celery
– 1 cup of bone broth
– 1 tbsp. of extra virgin olive oil
– 2 pinches of sea salt
– 1 tablespoon of apple cider vinegar

Sauté the onion in extra virgin olive oil until it is translucent. Add the chopped carrots and ginger and then sauté for another 5 minutes. Add the other vegetables and sauté for a couple of more minutes. Then, add some sea salt and the bone broth to cover the vegetables with. Cover the pot with a lid and let it simmer until the vegetables are all quite soft. Put everything in a blender and blend until smooth. Add apple cider vinegar and sea salt to taste.
